Cheese and Tomato Pie Recipe

INGREDIENTS
1 lb cooked potatoes
¼ cup margarine
1 ½ cups grated cheddar cheese
1 lb tomatoes
2 teaspoons chopped chives
1 table spoon chopped parsley.

PROCEDURE

  • Slice the potatoes thinly and put about one-third into a well greased dish.
  • Cover with half the cheese, half the sliced tomatoes etc. then the rest of the cheese tomatoes and herbs.
  • Cover with sliced potatoes and the rest of the margarine.
  • Bake in the center of a very moderate to moderate oven, 350-375 F, Gas Mark 4-5 for about 40 minutes.
  • Serve with a green salad.

Serve 4-6
