EASY THAI GREEN CURRY

TIME REQUIRED: 40 minutes
SERVES: 4

INGREDIENTS

2 tbsp vegetable oil
1 tbsp Thai green curry paste (available at leading grocery stores)
5 kaffir lime leaves
200 ml coconut milk
50 g broccoli, chopped
50 g zucchini, chopped
40 g mushrooms, diced
40 g baby corn, diced
30 g carrot, chopped
30 g cauliflower, chopped
5 g salt
10 g sugar
10 g basil leaves, chopped

Note:1 gram = 0.035oz

PROCEDURE

  • Heat the oil in a wok. Add Thai green paste along with kaffir lime leaves and saute for five minutes.
  • Add coconut milk and all the chopped vegetables with salt and sugar.
  • Mix well and cook on low heat, allowing the mixture to simmer till it thickens.
  • Add basil leaves.
  • Serve with steamed white rice.
