Vegetarian Spaghetti Bolognese Recipe - Nutritious and Tasty
INGREDIENTS
8 oz whole wheat spaghetti water to cook sea salt (optional)
For the sauce
Nearly 3 tablespoons olive or corn oil
1-2 cloves of garlic
1-2 onions
2 large tomatoes
2-4 mushrooms (optional)
1 cup dehydrated nut meat or vegetable protein
1 cup little white wine
Sea salt
Cayenne pepper
To garnish
Chopped parsley
Grated cheese
PROCEDURE
- Cook the spaghetti by boiling in a closed pan on medium fire.
- Start cooking the sauce as soon as the spaghetti begins cooking or can be made before cooking the pasta.
- Heat the oil in a pan, add the crushed cloves of garlic finely chopped onions, tomatoes, mushrooms.
- Meanwhile, blend the nut meat with hot water, allow to stand about 5 minutes add to the vegetables mixture and cook for about 5 minutes.
- Add a little white wine to make a more liquid mixture.
- Taste add seasoning, or add a little yeast extract if wished.
- Nut meats and vegetables proteins are well flavored, so be sparing with the seasoning.
- Strain the spaghetti, pile on to a hot dish and top with the sauce, parsley and cheese.
- Serve with extra grated cheese if required.
- Serves 6-8 as an hors d’oeuvre, or 3-4 as a main dish, excellent with green salad.
